3 easy and healthy desserts with bananas for ‘quarantine period’

Stuck at home due to COVID-19 lockdown and craving for desserts? I tried these 3 simple recipes with easily available ingredients. The best part is that all of them are ‘sugar-free’.

  1. Banana walnut bread

  2. Banana oats pancake

  3. Banana walnut bread pudding (eggless)

1. Banana walnut bread

Preparation time: 10 min | Cooking time: 60 min | Total time: 70 min



Ingredients:

  1. 4 bananas (ripe/ over ripe)

  2. 2 eggs

  3. 1/2 cup unsalted butter/ghee

  4. 1+1/2 cup flour

  5. 1 teaspoon baking powder

  6. 2-3 teaspoon cocoa powder (optional)

  7. Walnuts (optional)

  8. Chocolate (optional)

Preparation:

  1. Pre-heat oven at 175-180 ˚C for 10-15 min, while you prepare the batter

  2. Melt butter and cool (Do not use hot butter otherwise eggs can get cooked)

  3. Wet ingredients: In a bowl – mash bananas, add eggs, butter, and mix well

  4. Dry ingredients: In a separate bowl – mix flour, baking powder, and cocoa powder

  5. Mix everything together

  6. Add walnuts and chocolate (to make it extra special)

  7. Mix well

  8. Slightly grease the baking dish with butter

  9. Pour the mixture into the baking dish

  10. Bake at 175-180 ˚C for 60 min

  11. Do the knife test – put a knife through the bread, it should come out clean

Tips:

  1. Do not mix hot butter with eggs

  2. Use ripe/over ripe bananas

  3. You can add vanilla essence, cinnamon, or other nuts

  4. Bananas: Makes the bread moist, soft & spongy and sweet

  5. Baking powder: Helps in fluffing

  6. You can use any baking dish if you don’t have a bread loaf pan (like me)

2. Banana oats pancake

Preparation time: 5 min | Cooking time: 15 min (4 pancakes) | Total time: 20 min



Ingredients:

  1. 2 bananas (ripe/ over ripe)

  2. 2 Eggs

  3. 1/2 cup quick oatmeal

  4. 1/2 teaspoon baking powder (optional)

Preparation:

  1. In a bowl – mash bananas

  2. Add eggs

  3. Add oats and baking powder

  4. Mix well

  5. Slightly grease the pan with oil

  6. Pour the mixture onto the pan with a ladle (big spoon) and cook & flip

  7. Top-up with bananas/strawberry (to make it extra special)

Tips:

  1. Use ripe/over ripe bananas

  2. Bananas: Makes the pancakes spongy and sweet

  3. Baking powder: Helps in fluffing

  4. Serve with maple syrup/ honey

3. Banana walnut bread pudding (eggless)

Preparation time: 10 min | Cooking time: 40 min| Total time: 50 min



Ingredients:

  1. 4-6 slices of bread

  2. 2-3 bananas (ripe/ over ripe)

  3. 1/2 cup milk

  4. 1/2 teaspoon baking powder

  5. 2 teaspoon cocoa powder (optional)

  6. Walnuts (optional)

  7. Chocolate (optional)

Preparation:

  1. Make bread crumbs

  2. Pre-heat bread crumbs in oven at 175-180 ˚C for 10-15 min, while preparing the batter (to dry out the bread)

  3. Wet ingredients: In a bowl – mash bananas, add milk, and mix well

  4. Add baking powder and cocoa powder (optional)

  5. Mix everything together

  6. Add the pre-heated bread crumbs (do not crush)

  7. Add walnuts and chocolate (to make it extra special)

  8. Mix well

  9. Slightly grease the baking dish with butter

  10. Pour the mixture into the baking dish or pour as cookies or muffins

  11. Bake at 175-180 ˚C for 40 min

  12. Do the knife test – put a knife through the mixture, it should come out clean

Tips:

  1. Use ripe/over ripe bananas

  2. Bananas: Makes the pudding spongy and sweet

  3. Milk: Helps in making the pudding soft & moist

  4. Baking powder: Helps in fluffing

  5. Add sugar/honey/cinnamon (optional)

  6. Serve with ice cream
